A stump left in the ground doesn't rot away fast enough to matter — it just sits there, in the way, for years. Grinding is the shortcut: the wood goes down below grade in one visit, and the spot is yours to use again.
Five inches or so under the soil line is where a standard grind stops — plenty for grass to take or a small bed to go in over top. If a replacement tree is the plan for that exact spot, say so up front and the crew will take it further down.
